Homemade Granola

Ingredients

Dry Ingredients

  • cups rolled oats
  • 1 cup raw almonds, roughly chopped
  • ½ cup raw walnuts, roughly chopped
  • ½ cup raw sunflower seeds
  • ½ cup raw sesame seeds
  • 2 tbsp ground flax
  • 2 tbsp sweetened coconut flakes
  • 1 tsp ground cinnamon
  • a pinch ground nutmeg
  • ¾ tsp kosher salt

Wet Ingredients

  • 3-4 tbsp brown rice syrup
  • 1 tbsp agave nectar
  • 1 tbsp coconut oil
  • 2 tbsp unsweetened applesauce
  • 2 tbsp peanut butter
  • cup packed brown sugar

Add-ins

  • cup dried cranberries
  • cup raisins
  • a handful pepita seeds

Instructions

  1. Preheat the oven to 300°F.
  2. In a medium saucepan over medium heat, combine the wet ingredients and stir well. Bring to a boil and then simmer on low for 5-10 minutes, stirring frequently.
  3. In a very large mixing bowl, mix together the dry ingredients.
  4. Pour the warm wet mixture over the dry mixture and stir until thoroughly combined.
  5. Spread the mixture onto a baking sheet lined with parchment paper or a non-stick mat.
  6. Bake for 45 minutes, stirring every 15 minutes to ensure even baking.
  7. Allow to cool for 20-25 minutes on the pan before serving.
