Ingredients

The granola mix

  • 3 ½ cups rolled oats
  • 1 cup almonds (raw, sliced)
  • 1 cup cashews (or walnuts or pecans)
  • 1 cup unsweetened coconut flakes
  • ½ cup sunflower seeds (raw)
  • ½ cup pumpkin seeds (raw)
  • 2 teaspoons cinnamon (ground)
  • 1 ½ teaspoons ginger (ground)
  • ½ teaspoon nutmeg (ground)

The binding mixture

  • 6 tablespoons butter (unsalted)
  • ½ cup honey
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 250 degrees and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oats, almonds, cashews, coconut, seeds, and spices.
  3. In a small saucepan, heat the butter and honey over low heat until melted, then stir in the vanilla and salt.
  4. Pour the melted mixture over the dry ingredients and mix until evenly coated.
  5. Spread the mixture onto the prepared baking sheet in an even layer.
  6. Bake for 75 minutes, allowing it to become crisp as it cools.
  7. Once cooled, break into pieces for bars or smaller chunks for cereal, and store in an airtight container.
