Ingredients

The granola base

  • 2 ½ cups rolled oats
  • 1 cup unsweetened coconut flake
  • 1 cup raw almonds
  • 3 Tbsp sugar
  • ¼ tsp salt
  • ¼ cup coconut oil
  • ¼ cup almond butter
  • cup maple syrup or agave

The chocolate

  • cup dairy-free dark chocolate

Instructions

  1. Preheat the oven to 340°F (171°C).
  2. In a large bowl, mix the oats, coconut flakes, sugar, salt, and almonds.
  3. In a small skillet, warm the coconut oil, almond butter, and maple syrup over medium-low heat, then pour over the dry ingredients and mix well.
  4. Spread the mixture evenly on baking sheets and bake for 20-25 minutes, stirring halfway through.
  5. Watch carefully to prevent burning; the granola is done when it is visibly browned.
  6. Remove from the oven and let it cool completely.
  7. Once cooled, add the chopped dark chocolate and toss, or add while warm to melt and coat the granola.
  8. Store in an airtight container for 2-3 weeks.
