Ingredients

  • 3 cups rolled oats
  • 1 cup almonds, chopped
  • cup ground flax seeds
  • ¼ cup coconut oil, melted
  • cup honey
  • cup packed light-brown sugar
  • ½ tsp vanilla extract
  • ¼ tsp almond extract
  • 1 large egg white
  • ¼ tsp fine sea salt

Instructions

  1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. In a large bowl, toss together the oats, almonds, and ground flax seeds.
  3. In a separate bowl, whisk together the coconut oil, honey, brown sugar, vanilla extract, almond extract, egg white, and salt until well blended.
  4. Pour the honey mixture over the oat mixture and toss until evenly coated.
  5. Spread the mixture onto the prepared baking sheet in an even layer.
  6. Bake for 13 minutes, then flip the granola and spread it back into an even layer.
  7. Continue baking until lightly golden brown, about 12 to 17 minutes more.
  8. Let the granola cool completely, then break it into clumps and store in an airtight container.
