Honey Almond Granola

Ingredients

The base

  • 4 cups old-fashioned rolled oats
  • 1 ½ cups raw slivered almonds
  • 1 teaspoon fine-grain sea salt
  • ¼ teaspoon cinnamon
  • ¼ teaspoon ground ginger

The sweeteners and fats

  • ½ cup melted coconut oil or olive oil
  • ½ cup honey or maple syrup
  • 1 tablespoon honey or maple syrup
  • ¾ teaspoon vanilla

The dried fruits

  • ½ cup chopped dried apricots
  • ¼ cup chopped dried cherries, cranberries, raisins or currants

Instructions

  1. Preheat the oven to 350°F and line a half-sheet pan with parchment paper.
  2. In a large mixing bowl, combine the oats, nuts, salt, cinnamon, and ground ginger.
  3. Stir in the oil, honey, and vanilla.
  4. Spread the granola mixture onto the prepared pan in an even layer.
  5. Bake for 22 to 26 minutes, stirring halfway through, until lightly golden.
  6. Let the granola cool before stirring in the chopped fruit.
  7. Store the granola in an airtight container at room temperature for 1 to 2 weeks or in the freezer for longer.
