Ingredients

  • cup coconut oil
  • cup honey
  • 1 tablespoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon coarse salt
  • 3 cups old-fashioned rolled oats
  • 1 cup chopped walnuts or pecans
  • 1 cup sliced almonds

Instructions

  1. Preheat the oven to 250°F and prepare a baking sheet with cooking spray.
  2. Melt the coconut oil in a glass measuring cup or bowl in the microwave, stirring every 30 seconds.
  3. Mix in honey, cinnamon, vanilla extract, and salt until well combined.
  4. In a large bowl, combine oats, walnuts or pecans, and almonds, then drizzle the coconut oil mixture over and stir to combine.
  5. Spread the granola mixture evenly on the baking sheet, ensuring it is pressed together in one sheet.
  6. Bake for 1 hour to 1 hour 15 minutes until golden brown and crisp.
  7. Allow the granola to cool completely on the baking sheet for at least 2 hours before breaking into chunks and storing.
