Instructions
- Preheat the oven to 300°F and line a large baking sheet with parchment paper.
- In a large bowl, combine oats, hazelnuts, coconut, cinnamon, and salt.
- In a small bowl, whisk together melted coconut oil, maple syrup, honey, vanilla, and hazelnut extract.
- Pour the liquid mixture over the dry ingredients and stir until well-coated.
- Spread the granola mixture onto the prepared baking sheet in an even layer.
- Bake for 30 minutes, stirring every 10 minutes, until golden brown.
- Let the granola cool completely, then stir in dried cherries and dark chocolate chunks.
- Store in an air-tight container for up to 1 month.
