Ingredients

The granola base

  • 3 cups rolled oats
  • ½ cup unsweetened coconut flake
  • 1 cup almonds
  • 1 cup pecans
  • ¼ cup craisins (or other dried fruit)
  • 3 Tbsp sugar
  • ¼ tsp salt
  • ½ Tbsp ground cinnamon
  • 1 Tbsp cocoa powder (optional)

The binding ingredients

  • ¼ cup extra virgin coconut oil
  • ½ cup honey (sub maple syrup or agave for vegan)
  • 1 tsp vanilla extract

Instructions

  1. 1. Preheat the oven to 340°F (171°C).
  2. 2. In a large bowl, mix the oats, coconut, cinnamon, sugar, cocoa powder, salt, and nuts.
  3. 3. In a small saucepan over medium-low heat, warm the coconut oil, honey, and vanilla extract, then pour over the dry ingredients and mix well.
  4. 4. Spread the mixture evenly onto a baking sheet and bake for 20-25 minutes, stirring halfway through.
  5. 5. Add the craisins in the last few minutes of cooking to prevent them from hardening.
  6. 6. Once the granola is visibly browned, remove it from the oven and let it cool in a bowl before storing it in an airtight container.
