Coconut Granola

Ingredients

The granola base

  • 2 cups old-fashioned oats
  • ¾ cup shredded sweetened coconut
  • ½ cup chopped almonds
  • cup pepitas
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt

The wet ingredients

  • 4 tablespoons coconut oil, melted
  • ½ cup pure maple syrup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon coconut extract

Instructions

  1. Preheat the oven to 300°F and line a baking sheet with parchment paper.
  2. In a large bowl, mix together the oats, coconut, almonds, pepitas, cinnamon, and salt.
  3. In a separate bowl, whisk together the melted coconut oil, maple syrup, vanilla extract, and coconut extract.
  4. Pour the wet mixture over the dry ingredients and stir until well-coated.
  5. Spread the granola mixture evenly on the prepared baking sheet.
  6. Bake for 30 minutes, stirring every 10 minutes, until golden brown.
  7. Allow the granola to cool completely before storing it in an airtight container.
