Instructions
- Preheat the oven to 300°F and line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, coconut, almonds, pepitas, cinnamon, and salt.
- In a separate bowl, whisk together the melted coconut oil, maple syrup, vanilla extract, and coconut extract.
- Pour the wet mixture over the dry ingredients and stir until well-coated.
- Spread the granola mixture evenly on the prepared baking sheet.
- Bake for 30 minutes, stirring every 10 minutes, until golden brown.
- Allow the granola to cool completely before storing it in an airtight container.
