Chocolate Coconut Granola

Ingredients

The granola base

  • 2 cups old-fashioned rolled oats
  • cup shredded coconut
  • cup sliced almonds

The binding mixture

  • 2 Tbsp vegetable oil
  • ¼ cup brown sugar
  • 2 Tbsp honey
  • ¼ tsp salt
  • ¼ tsp vanilla extract
  • 3 Tbsp unsweetened cocoa powder
  • 2 Tbsp water

Instructions

  1. Preheat the oven to 300°F.
  2. In a large bowl, mix the oats, shredded coconut, and sliced almonds.
  3. In a small pot, combine the oil, brown sugar, honey, salt, vanilla extract, cocoa powder, and water; heat until the sugar dissolves.
  4. Pour the chocolate mixture over the oat mixture and stir until well coated.
  5. Spread the mixture on a foil-lined baking sheet in a layer about ½ inch thick.
  6. Bake for 45 minutes without stirring.
  7. After baking, press down the granola with a spatula and let it cool completely.
  8. Break into chunks and store in an airtight container.
