Ingredients

The granola

  • 2 cups oats
  • 2 cups brown rice crisp cereal
  • ¼ cup cocoa powder
  • 1 cup unsweetened shredded coconut
  • ¾ cup almonds (or other nuts/seeds), chopped finely

The binding mixture

  • ½ cup melted coconut oil
  • cup maple syrup
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 275°F.
  2. In a large bowl, combine the oats, rice cereal, cocoa powder, coconut, and chopped nuts.
  3. In a small bowl, mix the coconut oil, maple syrup, and vanilla extract together.
  4. Pour the liquid mixture over the dry ingredients and stir to coat evenly.
  5. Transfer the mixture to a 9x13 inch baking dish.
  6. Bake for about 1 hour until it binds together and feels solid.
  7. Remove from the oven and let it cool completely before breaking apart.
  8. Store in an airtight container.
