Healthy Chocolate Granola

Ingredients

The granola base

  • 4 cups rolled oats
  • 1 cup finely chopped nuts
  • ½ cup coconut flakes
  • ½ tsp salt

The sweet mixture

  • ½ cup coconut sugar
  • ½ cup cocoa powder
  • ½ cup maple syrup
  • ½ cup coconut oil
  • 1 tsp vanilla

The chocolate topping

  • 1 cup chocolate chips or 2 chocolate bars chopped
  • optional flake sea salt

Instructions

  1. 1. Preheat the oven to 325°F and line a baking sheet with parchment paper.
  2. 2. In a large bowl, mix the rolled oats, chopped nuts, coconut flakes, and salt.
  3. 3. In a saucepan, heat the coconut sugar, cocoa powder, maple syrup, and coconut oil over medium heat until the sugar dissolves, about 3-4 minutes.
  4. 4. Remove from heat and stir in the vanilla.
  5. 5. Pour the saucepan mixture over the oat mixture and stir until well combined.
  6. 6. Spread the mixture onto the prepared baking sheet and press it flat.
  7. 7. Bake for a total of 25-30 minutes, stirring halfway through.
  8. 8. After baking, immediately sprinkle the chocolate chips on top and return to the oven for 5 minutes to melt.
  9. 9. Stir the granola to coat it with melted chocolate, then let it cool for one hour before breaking it apart.
  10. 10. Store in the pantry at room temperature for up to two weeks.
