Chocolate Peanut Butter Granola

Instructions
- Preheat the oven to 325°F and line a baking sheet with parchment paper.
- In a large bowl, mix together the oats, peanuts, and salt.
- In a saucepan, heat the coconut sugar, cocoa powder, maple syrup, peanut butter, and coconut oil over medium heat for about 3 minutes until the sugar is dissolved.
- Turn off the heat and add the vanilla extract.
- Pour the saucepan mixture onto the oat mixture and stir until well combined, ensuring each oat is coated in chocolate.
- Spread the mixture onto the baking sheet and press it into a flat layer.
- Bake for 25-30 minutes.
- Once baked, top with chocolate chips and return to the oven for an additional 3 minutes until the chips melt.
- Stir the granola to coat it with the melted chocolate.
- Let cool for 30 minutes before breaking into pieces.
- Store in a sealed container in the pantry for up to two weeks.
