Irresistible Peanut Butter Granola

Instructions
- Preheat the oven to 325°F and line a large baking sheet with parchment paper.
- In a large mixing bowl, combine the oats and nuts, and set aside.
- In a separate bowl, mix together the peanut butter, honey, coconut oil, vanilla, salt, and cinnamon until smooth.
- Pour the peanut butter mixture over the oats and nuts, stirring until evenly combined.
- Spread the mixture evenly on the prepared baking sheet and bake for 25 minutes, stirring halfway through.
- After 25 minutes, sprinkle the coconut on top and bake for an additional 4-5 minutes until lightly toasted.
- Remove from the oven and let cool to room temperature before stirring in chocolate chips, if using.
- Serve immediately or store in an airtight container at room temperature for up to 1 month.
