Ingredients

Korean Beef

  • ½ cup soy sauce
  • ¼ cup unseasoned rice vinegar
  • ¼ cup brown sugar
  • ¼ cup toasted or regular sesame oil
  • 1 tablespoon fresh ginger or ginger paste
  • 1 tablespoon minced fresh garlic
  • 2 pounds flank or skirt steak
  • 1-2 tablespoons oil for cooking

Quick Slaw

  • 4 cups shredded cabbage
  • 1 cup shredded or grated carrots
  • 1 cup chopped cucumbers
  • ¼ to ½ cup chopped fresh cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons soy sauce
  • 2 tablespoons oil (like avocado or olive oil)
  • to taste salt and pepper
  • to taste Sriracha

Sauce to End All Sauces

  • ½ cup sour cream
  • ½ cup mayonnaise
  • 3 tablespoons fresh lime juice
  • 1 teaspoon Sriracha sauce
  • 1 teaspoon garlic powder

For Serving

  • as needed corn or flour tortillas
  • as needed avocado slices
  • as needed fresh lime wedges

Instructions

  1. Prepare the marinade by whisking together soy sauce, rice vinegar, brown sugar, sesame oil, ginger, and garlic.
  2. Marinate the beef in the mixture for at least 4 hours or up to 24 hours.
  3. Heat oil in a skillet and cook the marinated beef until sizzling and cooked through.
  4. For the slaw, combine cabbage, carrots, cucumbers, and cilantro in a bowl.
  5. Mix lime juice, soy sauce, oil, salt, pepper, and Sriracha in another bowl, then pour over the slaw and toss.
  6. For the sauce, stir together sour cream, mayonnaise, lime juice, Sriracha, and garlic powder.
  7. Assemble tacos by placing cooked beef in tortillas and topping with slaw, sauce, avocado, and lime wedges.
