Ingredients

The Korean Beef

  • 1 14-ounce can pears, drained
  • 1 two-inch knob fresh ginger
  • 4 cloves garlic
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 1 tsp sesame oil
  • 2 lbs top sirloin

The Tacos

  • to taste chopped cilantro
  • to taste chopped peanuts
  • to taste kimchi
  • to taste sriracha mayo or yum yum sauce
  • as needed flour tortillas

Instructions

  1. Make the sauce by blending pears, ginger, garlic, soy sauce, sesame oil, and brown sugar until mostly smooth, reserving half for later.
  2. Trim fat from the meat, cut into large chunks, and place in the Instant Pot with half of the sauce. Cook on high pressure for 45 minutes.
  3. Release steam, then shred the meat in the Instant Pot using two forks.
  4. Assemble the tacos by filling each tortilla with beef, cilantro, peanuts, kimchi, and spicy mayo.
