Instant Pot Korean Beef Tacos

Ingredients

The Korean Beef

  • 1 14-ounce can pears, drained
  • 1 two-inch knob fresh ginger
  • 4 cloves garlic
  • ½ cup soy sauce
  • ½ cup brown sugar
  • 1 tsp sesame oil
  • 2 lbs. top sirloin

The Tacos

  • to taste chopped cilantro
  • to taste chopped peanuts
  • to taste kimchi
  • to taste sriracha mayo or yum yum sauce
  • as needed flour tortillas

Instructions

  1. Make the sauce by blending pears, ginger, garlic, soy sauce, sesame oil, and brown sugar until mostly smooth, reserving half for later.
  2. Trim fat from the meat, cut into large chunks, place in the Instant Pot, cover with half of the sauce, and cook on high pressure for 45 minutes.
  3. Release steam, shred the meat in the Instant Pot using two forks.
  4. Fill each tortilla with beef, cilantro, peanuts, kimchi, and spicy mayo.
