Ingredients

The nachos

  • 39 ounces tortilla chips
  • 2 cans black beans
  • 1 large white onion
  • 3 pounds shredded cheese (such as sharp cheddar and Monterey Jack)
  • 8 ounces Cotija cheese or feta
  • 1 bunch radishes
  • 1 bunch cilantro leaves

Toppings

  • 2 cups sour cream
  • cup water
  • to taste hot pepper sauce

Optional toppings

  • to taste Charred Tomatillo Salsa
  • to taste Dried Chile Salsa
  • to taste Pickled jalapeños
  • to taste Pico de gallo
  • to taste Guacamole

Instructions

  1. Preheat the oven to 350°F and coat baking sheets with nonstick spray.
  2. Layer half of the tortilla chips on the sheets and top with half of the carnitas, beans, onion, and shredded cheese. Repeat the layers.
  3. Bake one sheet at a time until the cheese is melted, about 20-25 minutes.
  4. Sprinkle with Cotija cheese, radishes, and cilantro, then serve with desired toppings.
