Ingredients

The filling

  • 1 lb ground chicken
  • 1 unit onion, diced
  • 4 cloves garlic, mashed
  • 1 tbsp ground ginger
  • 1 8 oz can water chestnuts, diced
  • ¼ cup chopped green onion
  • 1 tbsp avocado oil
  • ½ head butter lettuce

The sauce

  • 2 tbsp rice vinegar
  • 3 tbsp gluten free hoisin sauce
  • 2 tbsp sesame oil
  • 4 tbsp soy sauce or coconut aminos
  • 1 tsp sriracha

Instructions

  1. Sauté the onion, garlic, and ginger in avocado oil for about 3 minutes.
  2. Add the ground chicken and continue sautéing, breaking it down as it cooks.
  3. Prepare the sauce by whisking together the sauce ingredients.
  4. Pour the sauce into the chicken mixture and cook for a few more minutes until the sauce thickens.
  5. Stir in the green onion and water chestnuts.
  6. Fill the lettuce cups with the chicken mixture and serve.
