Pumpkin Spice Truffles

The coating

semi-sweet or white chocolate, coarsely chopped

extra graham cracker crumbs or cinnamon/sugar
Instructions
- Beat the cream cheese and confectioners' sugar until creamy.
- Add pumpkin and mix until combined.
- Incorporate graham cracker crumbs, pumpkin pie spice, cinnamon, and melted chocolate, then mix until combined.
- Cover and refrigerate the mixture for at least 1 hour.
- Roll the chilled mixture into balls (about 1 teaspoon each) and place on baking sheets.
- Chill the truffle balls for another 30 minutes.
- Melt the chocolate for coating and let it cool slightly.
- Dip each truffle in the melted chocolate and place back on the baking sheet.
- Allow the chocolate to set in the refrigerator before serving.
