Strawberry Cheesecake Truffles

Instructions
- Prepare a baking sheet with parchment paper or a silicone mat.
- Mix graham cracker crumbs, cream cheese, and confectioners’ sugar until combined, then fold in strawberries.
- Spoon mixture onto the baking sheet to form balls and chill for 30 minutes.
- Melt white chocolate in a double boiler or microwave until smooth.
- Dip each truffle in melted chocolate and place back on the baking sheet.
- Drizzle with colored chocolate if desired and refrigerate until set.
