Instructions
- 1. Boil water in a large pot and add 1 tablespoon of salt.
- 2. Cook the pasta until al dente, reserving ½ cup of pasta water before draining.
- 3. While the pasta cooks, prepare the vegetables by mincing the garlic, halving the tomatoes, and chopping the artichokes and olives.
- 4. Heat olive oil in a large skillet over medium-high heat, then add tomatoes, garlic, remaining salt, pepper, and red pepper flakes.
- 5. Cook until the garlic is fragrant and tomatoes start to break down, about 1-2 minutes.
- 6. Add the drained pasta to the skillet and toss to coat.
- 7. Add artichokes and olives, then drizzle with lemon juice and toss again.
- 8. If the pasta is too dry, add a splash of reserved pasta water.
- 9. Adjust seasoning as needed, remove from heat, and sprinkle with Parmesan and parsley before serving.
