Ingredients

The pasta

  • 6 ounces whole wheat angel hair pasta
  • 1 tablespoon kosher salt
  • 1 teaspoon kosher salt

The vegetables and flavorings

  • 4 cloves garlic
  • 2 cups grape or cherry tomatoes
  • 1 can quartered artichoke hearts (14 ounces)
  • 1 can whole pitted black olives (6 ounces)
  • 3 tablespoons extra-virgin olive oil
  • ½ teaspoon ground black pepper
  • ¼-½ teaspoon crushed red pepper flakes
  • ¼ cup freshly squeezed lemon juice
  • ¼ cup freshly grated Parmesan cheese
  • ¼ cup fresh Italian parsley, chopped

Instructions

  1. 1. Boil water in a large pot and add 1 tablespoon of salt.
  2. 2. Cook the pasta until al dente, reserving ½ cup of pasta water before draining.
  3. 3. While the pasta cooks, prepare the vegetables by mincing the garlic, halving the tomatoes, and chopping the artichokes and olives.
  4. 4. Heat olive oil in a large skillet over medium-high heat, then add tomatoes, garlic, remaining salt, pepper, and red pepper flakes.
  5. 5. Cook until the garlic is fragrant and tomatoes start to break down, about 1-2 minutes.
  6. 6. Add the drained pasta to the skillet and toss to coat.
  7. 7. Add artichokes and olives, then drizzle with lemon juice and toss again.
  8. 8. If the pasta is too dry, add a splash of reserved pasta water.
  9. 9. Adjust seasoning as needed, remove from heat, and sprinkle with Parmesan and parsley before serving.
