Ingredients

The pasta salad

  • 1 lb pasta
  • 1 jar sun-dried tomatoes (6.7 oz), drained and roughly chopped
  • 1 jar artichoke hearts (15 oz), drained
  • 1 cup pitted kalamata olives, drained and cut in half
  • 4 cups arugula
  • 1 cup shredded Parmesan cheese

The dressing

  • cup olive oil
  • 3 tablespoons golden balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey
  • 2 cloves garlic, minced
  • to taste Kosher salt
  • to taste black pepper

Instructions

  1. Cook the pasta according to package directions, then drain and rinse with cold water.
  2. In a large bowl, combine the pasta, sun-dried tomatoes, artichokes, olives, arugula, and Parmesan cheese.
  3. In a small bowl, whisk together the olive oil, balsamic vinegar, lemon juice, honey, garlic, salt, and pepper.
  4. Drizzle the dressing over the pasta salad and toss until well coated.
  5. Serve immediately or chill before serving.
