Easy Pasta Salad

Ingredients

The salad

  • ½ pound rotini pasta
  • 2 cups cherry tomatoes
  • ½ cup red onion
  • ½ cup red bell pepper
  • 1-2 cups cucumber
  • ¾ cup kalamata olives
  • ¾ cup frozen peas
  • 2 ounces mozzarella cheese
  • ¼ pound pepperoni, ham or salami
  • 2-3 tablespoons chopped parsley
  • 1 tablespoon fresh basil
  • to taste freshly ground black pepper
  • ¼ cup freshly grated parmesan cheese or feta cheese

The dressing

  • 2 cloves garlic
  • ¼ teaspoon dried oregano
  • 1 tablespoon parsley
  • 3-4 tablespoons white wine vinegar
  • 1-2 leaves basil
  • 1 teaspoon dijon mustard
  • 2 teaspoons sugar
  • 3-4 tablespoons extra virgin olive oil
  • to taste salt and pepper

Instructions

  1. Boil water in a large pot, add salt, and cook the pasta according to package directions until al dente.
  2. In a small bowl, mix the dressing ingredients: minced garlic, oregano, parsley, vinegar, basil, mustard, sugar, salt, pepper, and olive oil.
  3. In a large bowl, combine the cooked pasta with tomatoes, onion, red peppers, cucumber, olives, peas, pepperoni/salami/ham, mozzarella, parsley, basil, and ground pepper.
  4. Pour the dressing over the pasta mixture and mix thoroughly.
  5. Cover and chill before serving.
