Ingredients

The Pasta Salad

  • 8 ounces whole-wheat pasta
  • 8 ounces cherry tomatoes
  • 2 cups mixed greens
  • ¾ cup cheddar cheese
  • ½ cup pitted Mediterranean olives
  • ¼ cup fresh basil
  • ¼ medium red onion
  • 2 ounces sliced salami

The Dressing

  • ¼ cup olive oil
  • 2 tablespoons red wine vinegar
  • ½ teaspoon garlic powder
  • ¼ teaspoon salt
  • to taste pepper
  • 1 tablespoon mayonnaise

Instructions

  1. In a large bowl, combine the cooked pasta, tomatoes, greens, cheese cubes, olives, basil, red onion, and salami.
  2. In a small jar, mix the dressing ingredients and shake until emulsified.
  3. Pour the dressing over the pasta salad and mix until well coated.
  4. Serve immediately or store in the fridge for up to 3 to 4 days.
