Ingredients

Base Ingredients

  • 8 tablespoons salted butter
  • 8 tablespoons coconut oil
  • 2 tablespoons cocoa powder
  • 4 tablespoons honey
  • 2 tablespoons almond butter
  • 1 teaspoon vanilla
  • a couple pinches salt

Filling Ingredients

  • 1 heaping cup frozen raspberries
  • ½ cup whole or chopped pecans

Toppings

  • to taste cacao nibs
  • to taste flaked coconut
  • to taste sea salt

Instructions

  1. Line a pie plate with parchment paper or foil and arrange the raspberries and pecans in a single layer.
  2. Melt 4 tablespoons of butter and 4 tablespoons of coconut oil, then whisk in cocoa powder, 2 tablespoons of honey, ½ teaspoon of vanilla, and a pinch of salt. Pour over the berries.
  3. Melt the remaining butter and coconut oil, then add almond butter, 2 tablespoons of honey, ½ teaspoon of vanilla, and a pinch of salt. Stir until melted and pour over the chocolate mixture.
  4. Freeze for at least 30 minutes until solid but still soft. Cut into wedges to serve.
