Ingredients

Chocolate Crust

  • ¾ cup blanched almond flour (or almond meal)
  • 2 tablespoons cocoa powder
  • 2 tablespoons pure maple syrup (at room temperature)
  • 1 tablespoon melted coconut oil
  • a pinch sea salt

Peanut Butter Filling

  • ½ cup creamy all-natural peanut butter
  • 2 tablespoons pure maple syrup (at room temperature)
  • 1 tablespoon melted coconut oil
  • ¼ teaspoon fine sea salt

Chocolate Topping

  • ¼ cup cocoa powder
  • ¼ cup melted coconut oil
  • 3 tablespoons pure maple syrup (at room temperature)

Instructions

  1. Line a 9-inch x 5-inch loaf pan with parchment paper.
  2. In a medium bowl, mix the chocolate crust ingredients until combined, then press into the bottom of the pan and freeze.
  3. For the peanut butter filling, mix the peanut butter, maple syrup, coconut oil, and salt, then spread over the crust and return to the freezer.
  4. For the chocolate topping, combine cocoa powder, melted coconut oil, and maple syrup until smooth, then pour over the peanut butter layer and freeze until firm.
  5. Once firm, lift the bars from the pan using the parchment paper and slice into squares.
