Ingredients

Shortbread

  • 1 cup coconut flour
  • ½ cup maple syrup
  • ½ cup coconut oil
  • 1 tsp vanilla

Almond Butter filling

  • 1 cup creamy almond butter
  • 2 Tbsp maple syrup
  • 2 Tbsp coconut flour
  • 2 Tbsp coconut oil
  • ¼ tsp salt (if unsalted almond butter)

Ganache

  • 1 can full-fat coconut milk
  • cups dark chocolate chips

Instructions

  1. Preheat the oven to 350°F and grease an 8x8 pan.
  2. Mix together all shortbread ingredients in a bowl.
  3. Pour the mixture into the pan and flatten it, then pierce with a fork.
  4. Bake for 10-12 minutes until golden brown.
  5. Let the crust cool completely.
  6. In a separate bowl, mix almond butter, maple syrup, coconut flour, coconut oil, and salt.
  7. Pour the almond butter mixture over the crust and refrigerate for 30 minutes.
  8. Melt chocolate chips by pouring heated coconut milk over them and stirring until smooth.
  9. Pour the chocolate ganache over the almond butter layer and refrigerate for at least an hour.
  10. Store in the freezer if not eaten within a few days.
