Chocolate Almond Butter Shortbread Cookies

Ingredients

The Cookies

  • 2 ½ cups fine almond flour
  • ½ cup melted coconut oil
  • 3 tbsp maple syrup
  • ½ tsp cinnamon

The Topping

  • 2 bars Hu Kitchen Almond Butter Puffed Quinoa, chopped into 16 squares
  • to taste sea salt

Instructions

  1. Mix all ingredients for the cookies in a medium bowl until a dough forms.
  2. Cover the dough and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F.
  4. Line a baking sheet with a silpat or parchment paper.
  5. Form cookies on the baking sheet using a spoon or cookie scoop.
  6. Make an imprint in each cookie using your thumb.
  7. Bake the cookies for 10 minutes.
  8. Remove from the oven and press lightly on the imprint again.
  9. Place one square of chocolate on each cookie and gently press down.
  10. Transfer cookies to a cooling rack and let cool completely.
