Chocolate Almond Butter Shortbread Cookies

The Topping

Hu Kitchen Almond Butter Puffed Quinoa, chopped into 16 squares

Instructions
- Mix all ingredients for the cookies in a medium bowl until a dough forms.
- Cover the dough and refrigerate for at least 30 minutes.
- Preheat the oven to 375°F.
- Line a baking sheet with a silpat or parchment paper.
- Form cookies on the baking sheet using a spoon or cookie scoop.
- Make an imprint in each cookie using your thumb.
- Bake the cookies for 10 minutes.
- Remove from the oven and press lightly on the imprint again.
- Place one square of chocolate on each cookie and gently press down.
- Transfer cookies to a cooling rack and let cool completely.
