Ingredients

The base

  • ¼ cup melted unsalted butter
  • ½ cup light brown sugar, packed
  • 2 tablespoons maple syrup
  • 1 large egg
  • ½ cup creamy almond butter
  • 1 teaspoon vanilla extract
  • pinch salt

The dry ingredients

  • cups quick-cooking oats
  • 1 teaspoon baking soda
  • 1 cup chocolate chunks
  • to taste flaky sea salt, for topping

Instructions

  1. Preheat the oven to 350ºF and prepare a baking sheet with non-stick spray.
  2. Cream together melted butter and brown sugar until smooth.
  3. Mix in maple syrup, egg, almond butter, and vanilla until well combined.
  4. Add salt, oats, and baking soda, mixing until incorporated.
  5. Fold in chocolate chunks.
  6. Refrigerate the dough for about 20 minutes.
  7. Scoop 2 tablespoons of dough, form into balls, and slightly press down on a baking sheet.
  8. Bake for 9-11 minutes until golden brown.
  9. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
