Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, combine almond butter, sugar, baking soda, tapioca starch (if using), egg, vanilla, and salt.
- Fold in the almonds and any mix-ins of choice.
- Chill the batter in the fridge for 10-15 minutes.
- Spoon 1 Tablespoon of dough onto the prepared baking sheet using a small cookie dough scoop.
- Bake the cookies for 8-9 minutes, then gently press them with a flat-bottomed glass to flatten.
- For crispier cookies, bake for 10-11 minutes.
- Allow the cookies to cool on the baking sheet for at least 10 minutes before transferring to a wire rack.
