Instructions
- Line a baking sheet with a silpat mat or spray with cooking spray.
- In a large bowl, combine almond butter and maple syrup, then microwave for 20 seconds to soften.
- Stir the mixture and add the rolled oats, mixing until coated.
- Scoop a heaping tablespoon of the dough and shape it into a cookie.
- Place the cookies on the baking sheet and repeat until all dough is used, making about 18 cookies.
- Refrigerate the cookies for 30 minutes to set, then transfer to an airtight container.
