Ingredients

  • ¼ cup coconut oil
  • ½ cup maple syrup
  • ¼ cup milk
  • 2 tablespoons unsweetened cocoa powder
  • ¼ cup creamy peanut butter
  • ½ teaspoon vanilla extract
  • cups whole rolled oats

Instructions

  1. Line a large baking sheet with parchment paper.
  2. Melt the coconut oil in a saucepan over medium heat and whisk in the maple syrup, milk, cocoa powder, peanut butter, and vanilla.
  3. Bring the mixture to a boil for 2 minutes while stirring often.
  4. Remove from heat and stir in the oats until thoroughly coated.
  5. Use a 2-tablespoon cookie scoop to place the dough onto the prepared baking sheet.
  6. Chill in the refrigerator for 30 minutes until firm.
