Ingredients

  • 1 cup natural peanut butter
  • cup melted coconut oil
  • cup honey
  • 1 tsp vanilla
  • 2 ¼ cups quick oats
  • ½ cup mini chocolate chips
  • to taste flaky sea salt

Instructions

  1. 1. Heat peanut butter and coconut oil in a large saucepan over medium heat.
  2. 2. Once melted, turn off the heat and stir in honey and vanilla.
  3. 3. Mix in the oats and let the batter chill in the refrigerator for 30 minutes.
  4. 4. After chilling, fold in the chocolate chips and shape the dough into cookies.
  5. 5. Place the cookies in the fridge for at least 30 minutes to an hour before serving.
  6. 6. Sprinkle with sea salt before enjoying.
