Instructions
- Preheat the oven to 350ºF.
- In a large bowl, combine the softened butter, peanut butter, and coconut sugar until smooth.
- Add the egg and mix again.
- Stir in the oat flour, baking soda, and salt until smooth.
- Fold in the rolled oats and chocolate chips if using.
- Scoop the dough onto a baking sheet lined with parchment paper.
- Flatten the cookies with a fork in a criss-cross pattern.
- Bake for 8 to 10 minutes until the cookies spread and puff up slightly.
- Let the cookies cool on the pan before transferring them to a cooling rack.
