Ingredients

  • 1 ¼ cups old fashioned rolled oats
  • ½ cup whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ¼ tsp salt
  • 4 Tbsp coconut oil, melted and cooled
  • ¼ cup natural creamy peanut butter
  • ½ cup maple syrup
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the oats, whole wheat pastry flour, baking powder, cinnamon, and salt.
  3. In a smaller bowl, mix the melted coconut oil, peanut butter, maple syrup, and vanilla until well combined.
  4. Combine the wet ingredients with the dry ingredients and mix until just combined, then fold in the chocolate chips.
  5. Using a cookie scoop, drop 1-inch cookie dough balls onto the prepared baking sheet and flatten the tops slightly.
  6. Bake the cookies for 8 to 10 minutes until golden and set, then cool on the baking sheet for 5 minutes before transferring to a wire rack.
