Peanut Butter Oatmeal Cookies

Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a medium bowl, combine all ingredients except for the chocolate chips and mix until well combined.
- Fold in the chocolate chips.
- If the dough is sticky, let it sit for 5 minutes or refrigerate until it firms up.
- Use a small cookie scoop to place dough onto the prepared sheets, slightly flattening each mound.
- Bake for 10-15 minutes until the centers are set and the edges are golden.
- Let the cookies cool on the pan for 10 minutes before transferring to a cooling rack.
