Peanut Butter Oatmeal Cookies

Ingredients

  • 2 cups old-fashioned or regular rolled oats
  • ½ cup cane sugar or coconut sugar
  • 1 tsp baking soda
  • ¼ tsp sea salt
  • 2 whole eggs
  • ¼ cup unsalted butter, softened or coconut oil
  • 1 tsp pure vanilla extract
  • 1 cup natural peanut butter
  • ¾ cup dark or semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a medium bowl, combine all ingredients except for the chocolate chips and mix until well combined.
  3. Fold in the chocolate chips.
  4. If the dough is sticky, let it sit for 5 minutes or refrigerate until it firms up.
  5. Use a small cookie scoop to place dough onto the prepared sheets, slightly flattening each mound.
  6. Bake for 10-15 minutes until the centers are set and the edges are golden.
  7. Let the cookies cool on the pan for 10 minutes before transferring to a cooling rack.
