Ingredients

The dough

  • 1 ½ cups creamy or chunky peanut butter
  • 2 ½ cups packed coconut sugar or lightly packed brown sugar
  • cup melted coconut oil or melted butter
  • 3 large eggs
  • 2 teaspoons baking soda
  • 2 teaspoons vanilla extract
  • 2 ½ cups quick-cooking oats or old-fashioned oats

Optional toppings

  • to taste flaky sea salt

Instructions

  1. Preheat the oven to 350°F and line two baking sheets with parchment paper.
  2. In a large bowl, mix the peanut butter, sugar, and melted coconut oil until combined.
  3. Add the eggs, baking soda, and vanilla, mixing well.
  4. Stir in the oats until evenly incorporated.
  5. Drop 2 tablespoons of dough per cookie onto the baking sheets, leaving space between each.
  6. Shape the dough into rounded mounds and flatten slightly.
  7. Bake for 8 to 10 minutes until golden around the edges, then cool for 10 minutes on the sheets before transferring to a rack.
  8. If desired, sprinkle with flaky sea salt and let cool completely before storing.
