Peanut Butter Oat Cookies

Instructions
- Preheat the oven to 350°F and line two baking sheets with parchment paper.
- In a large bowl, mix the peanut butter, sugar, and melted coconut oil until combined.
- Add the eggs, baking soda, and vanilla, mixing well.
- Stir in the oats until evenly incorporated.
- Drop 2 tablespoons of dough per cookie onto the baking sheets, leaving space between each.
- Shape the dough into rounded mounds and flatten slightly.
- Bake for 8 to 10 minutes until golden around the edges, then cool for 10 minutes on the sheets before transferring to a rack.
- If desired, sprinkle with flaky sea salt and let cool completely before storing.
