Instructions
- Preheat the oven to 350°F and prepare a baking sheet.
- In a bowl, whisk together flour, baking soda, baking powder, and salt.
- In a stand mixer, beat butter, peanut butter, and sugars until fluffy.
- Add the egg and vanilla, mixing until combined.
- Gradually add the dry ingredients, mixing just until combined.
- Stir in the oats until just combined.
- Roll tablespoon-sized balls of dough and place them on the baking sheet.
- Bake for 10-12 minutes until golden and edges are set.
- Let cookies cool for 5 minutes, then transfer to a wire rack.
- For the filling, beat together butter, peanut butter, and powdered sugar until smooth.
- Add heavy cream and beat until fluffy.
- Spread filling on the flat side of one cookie and sandwich with another cookie.
