Ingredients

  • 2 cups quick-cooking oats
  • 1 ½ teaspoons baking powder
  • teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¼ teaspoon ground cinnamon
  • ½ cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • ½ cup honey
  • ½ cup dark or semi-sweet chocolate chips

Instructions

  1. Whisk the dry ingredients together in a large bowl.
  2. In a separate bowl, mix the wet ingredients until blended.
  3. Combine the wet mixture with the dry ingredients and stir until just combined.
  4. Fold in the chocolate chips and chill the dough for at least 30 minutes.
  5. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  6. Drop dough balls onto the baking sheet and flatten them slightly.
  7. Bake for 9 to 10 minutes until golden and firm around the edges.
  8. Let cool on the baking sheet for 2 minutes before transferring to a wire rack.
