Instructions
- Line a baking sheet with parchment paper.
- In a saucepan, combine coconut oil, plant milk, sugars, and cocoa powder; heat until melted.
- Bring the mixture to a boil and cook for 1 ½ minutes while whisking constantly.
- Remove from heat and whisk until bubbles disappear, then stir in peanut butter and vanilla until melted.
- Fold in oats and cinnamon until combined.
- Drop tablespoon-sized portions onto the prepared baking sheet and flatten slightly.
- Let cookies set at room temperature for 30 minutes, then refrigerate until solid.
