Ingredients

The base

  • ¼ cup unsalted butter
  • cups granulated sugar
  • ½ cup milk
  • ¼ cup cocoa powder

The mix-ins

  • cup creamy peanut butter
  • 1 Tablespoon pure vanilla extract
  • 3 cups old-fashioned whole rolled oats
  • teaspoon salt

Instructions

  1. Combine the butter, sugar, milk, and cocoa powder in a saucepan over medium heat and whisk until the butter melts.
  2. Bring the mixture to a boil and let it boil for 1 minute without stirring.
  3. Remove from heat and stir in the peanut butter and vanilla extract until fully combined.
  4. Add the oats and salt, and mix well.
  5. Let the mixture sit for 5 minutes to allow the oats to absorb some moisture.
  6. Line baking sheets with parchment paper.
  7. Drop tablespoon-sized mounds of dough onto the sheets, flattening slightly if desired.
  8. Refrigerate the cookies for 30-60 minutes to set.
