Ingredients

  • 2 cups white sugar
  • ½ cup milk
  • ½ cup butter
  • cup cocoa powder
  • 1 cup peanut butter
  • 1 tablespoon vanilla
  • ¾ teaspoon cinnamon
  • 3 cups quick-cooking oats
  • ½ cup shredded coconut
  • to taste kosher salt

Instructions

  1. Line 2-3 baking sheets with wax or parchment paper.
  2. In a large saucepan, combine sugar, milk, and butter, and bring to a boil.
  3. Reduce heat and cook for 1 minute, then remove from heat.
  4. Add cocoa powder, vanilla, peanut butter, and cinnamon to the saucepan and mix well.
  5. Stir in oats and shredded coconut until combined.
  6. Drop tablespoonfuls onto the prepared baking sheets and sprinkle with kosher salt if desired.
  7. Allow cookies to cool completely.
