Instructions
- Line 2-3 baking sheets with wax or parchment paper.
- In a large saucepan, combine sugar, milk, and butter, and bring to a boil.
- Reduce heat and cook for 1 minute, then remove from heat.
- Add cocoa powder, vanilla, peanut butter, and cinnamon to the saucepan and mix well.
- Stir in oats and shredded coconut until combined.
- Drop tablespoonfuls onto the prepared baking sheets and sprinkle with kosher salt if desired.
- Allow cookies to cool completely.
