Almond Butter No-Bake Cookies

Ingredients

  • ½ cup coconut sugar
  • 2 Tbsp unsweetened almond milk
  • 3 Tbsp coconut oil
  • ½ tsp pure vanilla extract
  • cup salted natural almond butter
  • Tbsp coconut flour
  • ¼ cup sesame seeds
  • 3 Tbsp roasted unsalted sunflower seeds
  • 1 cup gluten-free rolled oats
  • 1 pinch sea salt

Instructions

  1. Prepare a baking sheet with parchment or wax paper.
  2. Combine coconut sugar, almond milk, and coconut oil in a saucepan and bring to a low boil over medium heat.
  3. Once boiling, swirl the pan and boil for 1 minute before removing from heat.
  4. Stir in vanilla, almond butter, coconut flour, sesame seeds, sunflower seeds, oats, and salt until well mixed.
  5. Drop heaping tablespoon amounts onto the prepared baking sheet.
  6. Let the cookies sit at room temperature for 20-25 minutes until cooled and firm.
  7. For faster setting, refrigerate the cookies.
