Ingredients

The cookie dough

  • ½ cup sliced almonds
  • ½ cup unsalted butter
  • ¾ cup powdered sugar
  • 1 large egg
  • ½ teaspoon vanilla extract
  • ½ teaspoon almond extract

The dry ingredients

  • 1 ½ cups all-purpose flour
  • ½ teaspoon cream of tartar
  • ½ teaspoon baking soda
  • ¼ teaspoon table salt

Instructions

  1. Preheat the oven to 350°F and line a cookie sheet with parchment paper if desired.
  2. Process ½ cup of sliced almonds in a food processor until broken into small pieces.
  3. In a mixing bowl, cream together the butter and powdered sugar until light and fluffy.
  4. Mix in the egg, vanilla extract, and almond extract until well combined.
  5. Whisk together the dry ingredients in a separate bowl and gradually add to the wet mixture.
  6. Fold in the ground almonds and form the dough into balls about 1.5 tablespoons in size.
  7. Coat the dough balls in powdered sugar and place them on the baking sheet, leaving space between each.
  8. Optionally, press a few sliced almonds into the top of each cookie.
  9. Bake for 9-11 minutes until puffy and edges are set, then let cool on a rack.
