Ingredients

  • 1 cup almond flour
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ¼ cup butter
  • ½ cup peanut butter
  • cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • cup chocolate chips

Instructions

  1. Preheat the oven to 180C/350F and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the dry ingredients.
  3. In another bowl, beat together the softened butter, peanut butter, sugar, and vanilla extract until smooth.
  4. Mix the dry ingredients into the wet ingredients until combined, then fold in the chocolate chips.
  5. Scoop out heaped tablespoons of the cookie dough, roll them into balls, and place them on the baking sheet, pressing them down lightly.
  6. Bake for 10-12 minutes until the edges are golden, then let them cool on the baking sheet.
