Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a medium bowl, mix together peanut butter, almond flour, baking soda, maple syrup, egg, and vanilla extract until well combined.
- If necessary, add up to 2 tablespoons of almond flour to achieve the right dough consistency.
- Divide the dough into 12 balls, flatten each ball on the baking sheet, and create a crisscross pattern using a fork.
- Bake for 10 minutes or until the tops are golden brown.
- Allow the cookies to cool on the baking sheet for 15 minutes before transferring them to a plate.
