Ingredients

The cookie dough

  • 1 cup almond flour
  • ¼ cup coconut flour
  • 1 tsp baking soda
  • cup peanut butter
  • ¼ cup coconut oil, melted and cooled
  • cup coconut sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup chocolate chips

For sprinkling

  • to taste sea salt

Instructions

  1. 1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. 2. In a medium bowl, combine almond flour, coconut flour, and baking soda.
  3. 3. In a large bowl, mix together peanut butter, coconut oil, and coconut sugar.
  4. 4. Whisk in the egg and vanilla extract.
  5. 5. Add the dry ingredients to the wet ingredients, mixing well. If the batter is too dry, add a splash of almond milk.
  6. 6. Fold in the chocolate chips.
  7. 7. Use a cookie scoop to place dough onto the prepared baking sheet.
  8. 8. Bake for 12-15 minutes or until slightly golden brown. Sprinkle with sea salt after removing from the oven.
