Ingredients

The cookie dough

  • 2 cups coconut sugar
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • ¼ teaspoon salt
  • 1 16-ounce jar creamy peanut butter

The chocolate chips

  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. In a bowl, whisk together the coconut sugar and eggs until smooth, then add vanilla and salt.
  3. Mix in the peanut butter until the dough is smooth.
  4. Stir in the chocolate chips until evenly distributed.
  5. Chill the dough for 15 minutes for better mounding.
  6. Scoop tablespoons of dough onto the baking sheet, leaving space between each.
  7. Bake for 11 to 13 minutes until golden at the edges.
  8. Let cookies rest for 2 minutes before transferring to a cooling rack.
  9. Store cookies at room temperature for up to 4 days or freeze for up to 3 months.
