Instructions
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- In a bowl, whisk together the coconut sugar and eggs until smooth, then add vanilla and salt.
- Mix in the peanut butter until the dough is smooth.
- Stir in the chocolate chips until evenly distributed.
- Chill the dough for 15 minutes for better mounding.
- Scoop tablespoons of dough onto the baking sheet, leaving space between each.
- Bake for 11 to 13 minutes until golden at the edges.
- Let cookies rest for 2 minutes before transferring to a cooling rack.
- Store cookies at room temperature for up to 4 days or freeze for up to 3 months.
