Ingredients

  • 2 cups almond flour
  • 1 cup rolled oats (certified gluten free)
  • 1 tsp baking soda
  • ¼ tsp salt (if peanut butter is unsalted)
  • 2 large eggs, room temperature
  • cup natural peanut butter
  • cup coconut oil, melted
  • cup coconut sugar
  • 1 tsp vanilla
  • cup chocolate chips (mini and regular)

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper or a silicone liner.
  2. In a medium bowl, mix together almond flour, rolled oats, baking soda, and salt.
  3. In a large bowl, whisk the eggs and then add peanut butter, coconut oil, coconut sugar, and vanilla.
  4. Combine the dry ingredients with the wet ingredients and stir to mix well.
  5. Use a cookie scoop or spoon to place dough on the baking sheet, making large balls with about ¼ cup of dough.
  6. Press chocolate chips into the top of each cookie without flattening them too much.
  7. Bake for 9-11 minutes or until slightly golden brown.
